I prefer aMSN, since I only use the MSN platform. It's a bit slow, but it works great.
For webcam, I use Mercury, but that rarely happens.

I hate TCL, so i use Adium for msn (unfortunely not all understand Jabber's philosofy) and iChat for XMPP

DeadAIM on winXP
I use MSN when talking to the GF, I have it modded with A-Chat patch. Removes the Ad's and all types of junk.

iChat on OSX, but looking for mods. Something similar to DeadAIM.

AdiumX - IM - Best app i`ve ever seen, with the most flexible interface which i really love.
Colloquy - IRC

@Thopedam :AFAIK AdiumX doesnt support webcams and i dont think it will, hmm, but maybe i`ve missed something. Maybe with 3rd party plugins or something...i dont know.

Simple answer for me : no auto-channel join option and no "minimize to taskbar" function. I hate the fact i have to keep the windows open to stay in chat room :/
