Here is my small list again. :-)

I recommend & love the following applications:

Adobe Photoshop
BetterZip (great unpacking application)
CandyBar (skin your Mac, use MacThemes (http://macthemes2.net) as a great resource)
Colloquy (best IRC client)
iLife & iWork
Little Snitch (must need)
OmniWeb (perfect Browser, I love it even more than Safari now!)
TextMate essential editor!
Transmit / Flow (as SCP/FTP Client, I prefer Transmit)

Some software I can suggest are iLife '08, Microsoft Office 2008, iWork '08, Adobe CS3 Master's Collection, Dragon Burn, Pacifist, and Toast Titanium 8.

@ROUGE

If you use apptrap check hazel out it has that feature plus it can watch folders for specific rules and organize or label your files according to a pretty extensive set of rules.

Monolingual (removes un-needed language support, giving you allot more space)
Handbrake (rips all copywrite dvd to MP4 format, many encodes)
MacTheRipper (rips all copywrite dvds. maintaining dvd format)
MacPAR deLuxe (rar files, par2)
Senuti (copy any ipod)
OnyX (system performance, maintenance)
