Windows Vista 64 SP1 and Windows 7 64 prinicpally support beeing installed to GPT scheme, but only on PCs with a mainboard that has an (U)EFI-Firmware, this firmware is anytime soon going to be a BIOS replacement and already beeing used on Intel Macs, it also inclueds an own booting technologie making an external bootloader unecessary.
PC_EFI and the related Chameleon bootlaoder use to emulate a EFI Firmware for using OSx86. And as far as I read it's also possible to install windows to GPT when booting the DVD using your OS X bootloader - but I haven't tried this as I am not interested in using Windows.
