So do you actually want to end up with an OS X server when it is all said and done? If so, don't feel restrained to the hazard server disc, as you can install the server packages on any working OS X install. You can either grab them from the usual places, or if you have a server disc just extract them off that. I actually just completed my Hackintosh server yesterday, and I must say I am loving it. It makes a great addition to the whole house audio/video system, not to mention handling everything else on the network.
Not sure if that helps you or not, but sometimes a successful install takes a few different discs.
