UI design is like car design. If different companies try to design a car for minimal windresistance, they all end up with a design that looks more or less similar (something you can actually see these days with new cars).
Same with UI design. They are trying to design something that works best for humans to interact with. In the end, every company will end up with something that is very similar to another company. That does not mean they copy from each other. There simply are not too many ways you can design a UI that works well.
