I can help out with a few of these questions... some are not my strong suite so I won't waste your time with my thoughts on them... I'm researching the ones I don't know so I can try to answer in the future.

select only one of these. The kernel is defined here. Your system specs are what will guide you to picking the correct one. The differences aren't always evident. Some provided better features for the systems as they came out. Always try to have the latest stable kernel for your type of system. For AMD I'd recommend the new voodoo kernel which incorporates the patching usually necessary to run certain apps or even use Apple Software Update to update the system.

ACPI dictates the power management for the devices of the system (other than the CPU... which now has the AppleIntelCPUPowerManagement.kext for this, so make sure to get the IntelCPUPMDisabler.kext or just Disabler.kext to counter this as it will cause kernel panics on non-Intel systems).

This is fine. you can actually select multiple chipset controller fixes and your system will know which to use.

Each of these is a different type of kernel extension injector that manipulates how the system will respond to the devices attached. Yes each is different so different results may occur with each (although some may provide the end result). The best way to know which way is best is to try them out... just make sure you are able to determine what file(s) is/are placed in the /System/Library/Extensions/ folder so when you want to change injectors you can easily delete the old one.
