Go to www.kexts.com and find voodooHDA.kext, that will work fine.

I have the iPC 10.5.6 patched to PPF5 like you do and I am trying to install it on the ET1331-02 which I bought from Woot.com (http://sellout.woot.com/blog/viewentry.aspx?id=13178). Is this the same machine you have?

Also, I can't seem to find System.kext or NForceATA_TEST in the driver list. I did (somehow) set it up so that I could boot into Mac successfully after install but neither my USB Storage Drives or DVD Drive would work (although my USB keyboard/mouse did)

Ok, did you get Ethernet working? If so the just find "Slice's USB 2.0 Patch" on the net and download it, it should be on kexts.com aswell, How may I ask did you get it to boot without the test version of the chipset driver? Is it a different revision maby?

Are you looking under the right categories and sub categories on the DVD? Are you having trouble navigating the Customize menu when looking for the nForceATA_TEST.kext or system.kext, if I remember correctly the system.kext fix is so that DMG images mount without a kernel panic.
