I figured out one of my issues, it was within the config of VMWare.
I kept getting panics, and remembered an issue I heard with the SB600 (my chipset) not loading without a -f flag
so i tried booting in vmware again with -v -f
got this code now

Jettisoning kernel linker
CODE SIGNING: cs_invalid_page: p=41[configd] clearing CS_VALID

Attached screen of what I got up to now...

I've read a few of the other guides, I've had to kinda stray in a few areas or I get panics before (such as telling me to set vmware to WinNT or FreeBSD) I set it to other and got this far.. I'm going to try a few other things...

Specification Intel(R) Xeon(TM) CPU 2.80GHz

Northbridge Intel E7501 rev. A1
Southbridge Intel 82801CA (ICH3-S) rev. 02

Thank you for any helps

P.S. Try to install on VMware Server 2.0 (need MAC OS X Server side)
