research the individual kernels... You can find a great deal by simply googling these as well as checking out the different forums for OSx86 all over the net.

I know Vanilla is the original kernel but that is pretty much it. I am guessing that Sleep is vanilla modded to handle sleep (although I haven't been able to get my computer to sleep using it) and speedstep is vanilla modded to enable speedstep.
The older kernels were created in order to help different systems be able to experience OSx86 and were updated/upgraded to try to match the newest vanilla. You'll have different results in performance and management with each. I've already given my plug for the Voodoo kernel (since this is also the latest stable version) and was created from the ground up... not based off another vanilla kernel (even though it gives great results).

I had them set up in my box but its not as big of a deal if you don't have a laptop.

there are many different installers for each of these Graphics injectors so no, you don't need to do it at installation. The default graphics still sets you up with 1024x768 or so even if its not natively supported so you can always edit it later.

I know I didn't answer the kernel questions in full... those are still a kind of mystery to me as well in terms of major differences. If anyone else cares to pitch in and give their two cents, that would be great.
